Dexterity measures how agile one is.

This is how the races rank in average dexterity:
1- Aarakocra
2- Elves Halflings Sahuagin
3- Half-elves
4- Humans
5- Gnomes Minotaurs
6- Dwarves Giants Ogres

Higher dexterity allows a person to carry more items.

Maximum Dexterity for Classes

Mage - 22
Shaman - ??
Bard - ??
Thief - 25
Ranger - 25
Thug - ??
Cleric - ??
Warrior - 22
Ordained - 23
